Changwang Noodles (Simplified Chinese: 肠旺面; Traditional Chinese: 腸旺麵; Pinyin: Chángwàng miàn) are a Guiyang specialty noodle soup of wheat noodles in a spicy, aromatic broth topped with sliced pork intestine (肠) and congealed pig blood (旺). They are named among Guizhou special snacks on Guizhou Food beside Silk Doll and other street foods[1].

Characteristics

Broth is red-chili fragrant with Guizhou spice character (often chili, fermented notes, and sour accents depending on stall); toppings are soft blood cubes and cleaned intestine slices over springy noodles. Served piping hot as breakfast or anytime snack.

Wheat noodles, pork intestine, pig blood curd, chili oil/paste, stock, garlic, ginger, scallion, optional tofu or greens. Distinct from Sichuan dan dan dry-style and from Guizhou Zunyi Mutton Rice Noodles.
