  • Lamb hot pot and boiled lamb: lamb served in broth is a common restaurant and home-style option. Regional styles differ in broth, cut and dipping sauce.
  • Air-dried meat (风干肉): beef and lamb are dried and seasoned for storage and later eating; local products include Alxa and Ordos examples.[2][9]
  • Offal, blood sausage and lamb soup: sheep offal, head meat and blood sausage feature in documented menus and local food directories.[18][6]

Dairy foods and tea

Milk is processed into a range of foods, including milk tofu or cheese (奶豆腐), milk skin (奶皮子), butter, yogurt and other fermented or dried dairy products. Methods, textures and names vary. Milk skin production in Ordos includes heating and repeatedly lifting or beating milk to form a rich surface layer; it is also used in newer desserts and snacks.[10][19]

Mongolian milk tea (蒙古奶茶) is commonly prepared by simmering brick tea and adding milk; salt and other ingredients may be included. Tea may be served with dairy foods, fried millet (炒米) or wheat snacks. The exact recipe is local rather than fixed across the whole region.[22][1]

Noodles, grains and baked foods

  • Oat noodles (莜面): Wuchuan and Ulanqab are associated with oat-based foods such as wowo (窝窝), yuyu (鱼鱼), pancakes and noodles. They may be served with lamb broth, potato soup or vegetable sauces.[16][15]
  • Hohhot shaomai (呼和浩特烧麦): thin wheat wrappers are filled with lamb and scallion and steamed. Shaomai shops and the historic food street are part of Hohhot's local food identity.[3]
  • Mongolian pie (蒙古馅饼): a pan-cooked filled wheat pastry, often with beef or lamb; regional fillings can also include other ingredients.[8]
  • Chifeng duijia (赤峰对夹): a layered, crisp flatbread served with smoked meat. It is a portable snack and a documented Chifeng specialty.[7]
  • Hetao wheat foods: noodles, breads and other flour foods draw on Bayannur's agricultural products.[14]
  • Millet, corn and potato foods: grains and potatoes appear in porridges, cakes, steamed foods and everyday household dishes in different farming and pastoral areas.[8][1]

Street foods and snacks

  • Shaomai (烧麦): Hohhot lamb shaomai is a steamed dumpling with an open, pleated wrapper.[3]
  • Duijia (对夹): Chifeng's smoked-meat filled pastry, often eaten warm.[7]
  • Roast lamb skewers and grilled lamb ribs: grilled meat is sold at restaurants, markets and regional events.[18][4]
  • Oat wowo and yuyu (莜面窝窝、莜面鱼鱼): shaped oat foods served with broth or a dipping sauce.[16]
  • Ulanqab fried cakes and steamed foods: local menus include fried wheat and grain-based snacks alongside oat dishes.[15]
  • Alxa sand-millet cold noodles (沙米凉粉): a chilled snack made with sand millet and served with seasonings such as garlic, vinegar and chili.[20]
  • Milk-skin sweets and cheese snacks: contemporary stalls and dairy shops serve traditional dairy foods as well as newer products such as milk-skin tanghulu.[10]

Drinks and alcohol

  • Salty milk tea (咸奶茶): brick tea is simmered with milk; salt may be added. It can be accompanied by fried millet, milk foods and wheat snacks.[22]
  • Fermented mare's milk (airag; айраг): a fermented dairy drink made from mare's milk in some Mongolian food traditions. Its availability and customary use are specific to communities and occasions.[23]
  • Milk liquor (奶酒): a regional dairy-based alcoholic drink referenced among Alxa Mongolian foods.[20]
  • Desert wine: Wuhai has a documented grape-growing and wine-making sector, promoted through regional wine tourism and tasting events.[12]
  • Baijiu and beer: served in restaurants and at some banquets; these are part of the wider dining scene rather than a single defining Inner Mongolian drink.

Regional products and food brands

  • Dairy products: Hohhot is the base of major dairy producers including Yili and Mengniu. These are modern commercial food brands and should be distinguished from traditional household dairy preparations.[24][25]
  • Xilingol cheese and lamb: regional dairy and meat products are promoted under local product identities; Xilingol cheese has geographical indication and regional brand recognition.[19][18]
  • Ulanqab oats and Zhuozi smoked chicken: locally associated agricultural and prepared-food products, with smoked-chicken production included in regional heritage and product recognition records.[15][16]
  • Hetao and Bayannur products: flour, lamb, Yellow River carp, sunflower products and local fruit and vegetable goods form part of the area's agricultural food production.[13][14]

Food heritage and production

Documented food heritage includes Hohhot shaomai making, Chifeng duijia preparation and Zhuozi smoked chicken. Regional food pages also document community-specific dairy and meat methods.
