Jilin cuisine, also known as Ji cuisine, belongs to the subcategory of Northeast cuisine. It is the one influenced by [[Shandong Food|Shandong cuisine]] and other cuisines, combined with the custom and practice of the local people. Jilin cuisine is based on the unique ingredients of Jilin Province, using unique cooking techniques, undergoing long-term development for the formation of the cuisine. It is well received by the general public. The world-famous Jilin ginseng, mink and pilose antler are called the three treasures of Northeast China.
Jilin Food covers the province's regional dishes, everyday meals, snacks, drinks and food products. Ji cuisine (吉菜) is one strand of this larger food map. Its modern culinary definition draws on local ingredients, Northeast Chinese home cooking, Shandong-influenced techniques and the food traditions of communities including Manchu, Korean, Mongolian and Han residents. These traditions overlap in markets and restaurant menus, but they are not a single uniform cuisine.<ref name="gazetteer">[https://dfz.jl.gov.cn/jltc/201111/t20111120_5217520.html Jilin Provincial Local Chronicles Compilation Committee, “Jilin Cuisine”]</ref>

These traditions overlap in markets and restaurant menus, but they are not a single uniform cuisine.[1]

The directory below groups representative foods by place and type. Dish names vary between households and restaurants; local listings are useful guides rather than fixed provincial standards.

Jilin Food by City

Changchun

Changchun's street-food and late-night lists often pair grilled skewers with chicken soup tofu skewers, a warm tofu snack served in seasoned broth. Barbecue includes charcoal-crock grilling and hanging-oven styles; the provincial tourism department describes the city's barbecue as part of its summer dining scene.[2] Look for noodles, dumplings, braised pork dishes and traditional pastries alongside these stalls.

Jilin City

Jilin City (吉林市), often called the River City, is associated with fried starch jelly (煎粉), cold noodles, Ula Manchu hotpot and dishes made with fish from the Songhua River and Songhua Lake. Tourism listings also name steamed whitefish, “three flowers and one island” fish, snow-clothes bean paste and grilled foods among the city's regional specialties.[3]

Siping

Siping is known for Li Lian Gui smoked meat flatbread (李连贵熏肉大饼): sliced smoked meat is wrapped in a layered griddled flatbread. The city government lists it among the city's recognized snack foods.[4]

Liaoyuan

Liaoyuan and Dongfeng county appear in regional food itineraries for venison dishes and venison hotpot, alongside Manchu Eight-Bowl banquet foods, sticky rice cakes and grilled cold noodles. Dongliao black pork is another local ingredient used in pork-and-vermicelli dishes.[5]

Tonghua

Tonghua's food directory includes ginseng chicken soup, mountain and river ingredients, grilled meats and Ji'an Goryeo fire-pot (高丽火盆). The fire-pot is served over charcoal with ingredients such as beef, pork, tofu, bean sprouts and rice sausage; the Tonghua agriculture bureau identifies it as a local specialty of Ji'an.[6]

Baishan

Baishan and the Changbai Mountain area are a useful place to look for ginseng dishes, forest mushrooms, mountain vegetables and freshwater fish. These ingredients also appear in contemporary regional cooking and packaged food products; the provincial government identifies ginseng, black fungus, mushrooms and other forest products among Jilin's food and agricultural specialties.[7]

Songyuan

Songyuan's food listings center on Chagan Lake fish, including fish hotpot and whole-fish meals, with Mongolian foods such as hand-held mutton and filled pancakes also appearing in regional itineraries. These menus reflect the lake and grassland foodways of western Jilin.[8]

Baicheng

In Baicheng, tourism listings feature Xianghai fish pot, fish dishes from Nenjiang Bay, Mongolian filled pancakes, hand-held mutton, roast lamb and local barbecue. The city is also within Jilin's western grains-and-livestock region, where millet, beans and other coarse grains appear in everyday meals.[9]

Yanbian Korean Autonomous Prefecture

Yanbian's Korean food traditions include cold noodles, warm noodle soup, soy-milk noodles, grilled beef, rice sausage (米肠), rice cakes, kimchi and stone-pot rice.
