Di San Xian (Simplified Chinese: 地三鲜; Traditional Chinese: 地三鮮; Pinyin: Dì sān xiān), literally "three fresh treasures from the earth," is a Northeast Chinese stir-fry of fried potato, eggplant, and green pepper finished in a savory garlic-soy sauce.[1]

Characteristics

Vegetables are often deep-fried or pan-fried first so edges caramelize, then tossed in sauce. The dish is hearty, slightly sweet-savory, and meatless but rich.
