Suan Ni Bai Rou (Simplified/Traditional Chinese: 蒜泥白肉; Pinyin: Suàn ní bái ròu) is a Sichuan cold appetizer of thinly sliced boiled pork belly ("white meat") dressed with pounded raw garlic, soy, chili oil, and sesame—not the same dish as Northeast Suan Cai Bai Rou (pickled cabbage with pork).

Characteristics

Pork is tender and barely seasoned before dressing; heat and aroma come from garlic-chili sauce. Served at room temperature as a shared starter.
