Wuxi Spare Ribs (Simplified Chinese: 无锡酱排骨; Traditional Chinese: 無錫醬排骨; Pinyin: Wúxī jiàng páigǔ) are pork spare ribs braised and finished in a thick sweet-savory soy glaze—the Wuxi (Su cuisine) style known for pronounced sweetness. They sit with other Wuxi classics such as Liangxi Crispy Eel on Jiangsu Food.

Characteristics

Glaze is glossy, sticky, and sweeter than many northern soy ribs; meat pulls from the bone. Sold as restaurant mains and packaged snacks from Wuxi.
