Nang (Simplified Chinese: 馕; Traditional Chinese: 饢; Pinyin: Náng) is the Uyghur / Xinjiang clay-oven flatbread that anchors everyday meals across Xinjiang Food, often compared to Central Asian naan but treated locally as the default staple bread beside Xinjiang Pilaf and Lamb Skewers.
Characteristics
Round loaves from thin crisp discs to thicker soft centers; sesame or onion toppings are common. Baked stuck to tandoor-like oven walls.
Ingredients (overview)
Wheat flour, water, yeast or starter, salt, optional sesame, onion, or lamb fat brush. Eaten with kebabs, pilaf, or tea.
History and culture
Core of Uyghur foodways on Xinjiang Food; travelers encounter nang stalls beside Cumin Lamb and Dapanji restaurants. Distinct from northern Shaobing in oven method and cultural framing.
Serving and variations
Staple with almost any Xinjiang main. See Xinjiang Food, Xinjiang Pilaf, and Lamb Skewers.
