Daokou Braised Chicken (Simplified Chinese: 道口烧鸡; Traditional Chinese: 道口燒雞; Pinyin: Dàokǒu shāojī) is a renowned Henan product from Daokou in Hua County: whole chicken braised in an aromatic master stock until the meat is fall-apart tender and deeply fragrant. Historic shops such as Yixing Zhang (义兴张) are closely associated with the style.

Characteristics

Skin is amber-brown; meat pulls easily from the bone. The flavor profile emphasizes spice-stock aroma and tenderness rather than deep frying crunch. Often sold whole as a travel and gift food.
