Dezhou Braised Chicken (Simplified Chinese: 德州扒鸡; Traditional Chinese: 德州扒雞; Pinyin: Dézhōu pá jī) is a famous Shandong (Lu cuisine) product: a whole chicken braised with spices until the meat is deeply flavored and tender enough to pull apart. It is closely tied to the city of Dezhou and sold as both restaurant food and travel snack.[1]

Characteristics

The chicken is glossy brown from braising liquids, aromatic with warm spices, and soft rather than crisp-fried. It is often eaten at room temperature when purchased as a packaged specialty.

Ingredients (overview)

Whole chicken, soy-based braising liquid, and a spice mix (commonly including warm aromatics used in northern Chinese braises). Producers keep house formulas; home versions vary.

History and culture

The dish is a long-standing Dezhou specialty within Shandong food culture and a familiar railway and gift-food item in northern China. It represents savory braised poultry rather than spicy Sichuan styles.

Serving and variations

Served sliced or whole as a main or travel snack. See Shandong Food for Lu cuisine context.
