Sweet and Sour Carp (Simplified Chinese: 糖醋鲤鱼; Traditional Chinese: 糖醋鯉魚; Pinyin: Tángcù lǐyú) is a Shandong (Lu cuisine) banquet dish of whole carp that is fried and finished with a bright sweet-and-sour sauce.

Characteristics

The fish is usually presented whole with a glossy red-amber sauce. The flesh should stay moist under a crisp exterior; sauce balances sugar, vinegar, and light savoriness.

Freshwater carp, starch for coating, oil for frying, sugar, vinegar, soy sauce or salt, aromatics such as ginger and scallion. Restaurant plating may add vegetable accents.

History and culture

Sweet-and-sour fish treatments are long associated with northern Chinese banquet cooking; Shandong versions featuring carp are especially well known on Shandong Food menus.
