Crossing the Bridge Noodles (Simplified Chinese: 过桥米线; Traditional Chinese: 過橋米線; Pinyin: Guò qiáo mǐ xiàn; also guoqiao mixian; crossing-the-bridge noodles) are a Yunnan rice-noodle meal: a large bowl of extremely hot broth arrives under a layer of insulating oil, while rice noodles and small dishes of thinly sliced meats, egg, vegetables, and seasonings are served separately for the diner to add in sequence so the broth cooks delicate ingredients. The dish is closely associated with Mengzi in southern Yunnan; Mengzi preparation technique is listed among China's national intangible cultural heritage projects (2014). The famous scholar-and-wife bridge story is a local legend, not a fully documented single invention. Soft exclusive restaurant inventorship claims are folk.[1]

Characteristics

Piping-hot clear or lightly seasoned broth with oil cap; springy rice noodles; many raw-to-cooked toppings; interactive assembly.

Ingredients (overview)

Rice noodles (mixian); chicken or other rich broth; oil layer; sliced meats, quail egg or hen egg, vegetables, herbs, chili. Overview only.

History and culture

Yunnan signature tied to Mengzi food culture and later Kunming/national restaurant fame; heritage listing recognizes Mengzi craft. Treat bridge-crossing origin tales as folklore. English usually says "crossing the bridge noodles" or "guoqiao mixian." See Yunnan Food.
