Jiuzhuan Dachang (Simplified Chinese: 九转大肠; Traditional Chinese: 九轉大腸; Pinyin: Jiǔzhuǎn dàcháng), literally "nine-turn large intestine," is a Shandong (Lu cuisine) classic of thoroughly cleaned pork large intestine fried and then braised in a multi-step sweet-savory sauce.
Characteristics
Intestine is tender with a slight chew; sauce is glossy, balancing sweet, savory, and aromatic spices. The poetic name refers to elaborate technique, not a literal nine plating turns in modern kitchens.
