Noodles, Breads and Grain Foods
Wheat foods are central to many Guanzhong and Shaanbei meals. Shaanxi noodle dishes include Qishan saozi noodles, biangbiang noodles, oil-splashed noodles (油泼面), knife-cut noodles, buckwheat hele, Ankang steamed noodles and Shaanbei buckwheat varieties. Breads and pastries include roujiamo breads, Qianzhou guokui, stone-baked buns, walnut breads, persimmon cakes and local steamed buns.[2][3][16]
In Hanzhong and other parts of Shaannan, rice-based foods include hot rice skin and local rice snacks. Hanzhong mianpi is made from rice batter; it differs from wheat-starch liangpi found elsewhere in Shaanxi.[14][20]
Tea, Drinks and Alcohol
Tea: Xianyang Fucha is a post-fermented dark tea associated with Jingyang; its production technique is listed as national intangible cultural heritage. Southern Shaanxi tea traditions include Ziyang selenium-rich tea, Hanzhong Xianhao and tea products from Shangnan.[11][17][18]
Other drinks: Huanggui fermented rice drink (黄桂稠酒) and sweet fermented rice are served in Shaanxi, especially in Guanzhong food settings. Local non-alcoholic drinks and tea preparations differ by locality.[2][5]
Alcohol: Xifeng baijiu (西凤酒), centered in Liulin Town, Fengxiang District, Baoji, is associated with a national intangible heritage brewing technique. Shaanxi also has other local baijiu makers; brand names and production centers should be distinguished from the wider regional cuisine.[10][21]
Ingredients, Condiments and Regional Products
Wheat and other grains feature heavily in northern and central Shaanxi; rice is more common in parts of Shaannan. Lamb, beef, chili, garlic, vinegar, sesame, beans and seasonal vegetables appear in regional meals, with combinations varying by locality. Southern Shaanxi is also known for tea, mushrooms, fish and foods from the Qinling and Daba mountain areas.[4][3]
Regional agricultural products include Luochuan apples, Meixian kiwifruit, Fuping persimmons, Hanzhong and Ziyang teas, Zhashui mushrooms, Yulin and Yan'an grains, and Fuping goat-milk products. These examples reflect the province's geographical-indication and regional-brand programs; they are food products, not a ranking of commercial brands.[22][23]
Vinegar, chili oil and seasoned sauces are common parts of noodle and cold-dish preparations. Qishan vinegar and local chili seasonings are cited in Baoji's food materials; in Shaannan, vinegar, chili and garlic feature in liangpi and steamed noodle dressings.[9][16][14]
Food Crafts and Cooking Methods
Shaanxi's food heritage includes noodle and bread preparation, paomo, liangpi, Fucha processing and regional brewing. The national heritage register documents traditional paomo preparation, Xianyang Fucha and Xifeng baijiu; Shaanxi Archives describes the preparation and serving styles of hulutou and the traditional processing of liangpi.[7][11][10][8][20]
