Huaxi Beef Rice Noodle (Simplified / Traditional Chinese: 花溪牛肉粉; Pinyin: Huāxī niúròu fěn) is a Guizhou rice-noodle soup associated with Huaxi District in Guiyang: rice noodles in a long-simmered beef bone broth, topped with sliced and diced braised beef, often with sour pickled cabbage or related pickles, cilantro, and toasted chili. Soft marketing claims of a single founding shop are commercial folklore; the style is a regional category. It is not Lanzhou Beef Noodles (wheat hand-pulled), not Crossing Bridge Rice Noodles (Yunnan assembly mi xian), and not Sichuan mala beef noodles.[1]
Characteristics
Broth is savory and lightly spicy-aromatic; noodles are soft rice fen; beef toppings are tender. Diners often add chili crisp or vinegar at the table.
