Shanxi Food (also called Jin cuisine; Chinese: 晋菜; pinyin: Jìncài) refers to the regional cooking of Shanxi Province in north China. It is famous for wheat-based noodles in countless shapes, the sharp fragrance of aged Shanxi vinegar, and sturdy, warming dishes suited to a continental climate.

Introduction

Shanxi sits on the Loess Plateau, historically a wheat-growing heartland. Local cooks excel at hand-pulled, knife-cut, and pressed noodles, often finished with vinegar, tomato, minced meat, or simple clear broth. Shanxi mature vinegar (山西老陈醋) is a signature condiment used across China.[1]
