Beer Duck (Simplified Chinese: 啤酒鸭; Traditional Chinese: 啤酒鴨; Pinyin: Píjiǔ yā) is a widely cooked Chinese home and restaurant dish of chopped duck braised with beer, aromatics, and often dried chilies or bean paste. It is common in Hunan and southwestern home cooking and is mentioned among Guizhou hot-pot / braise spreads on Guizhou Food; related versions appear in Hunan Food and Chongqing kitchens.
