Yangrou Paomo (Simplified Chinese: 羊肉泡馍; Traditional Chinese: 羊肉泡饃; Pinyin: Yángròu pàomó) is a Shaanxi specialty from the Xi'an area: diners tear unleavened flatbread (mo) into small pieces that are then soaked in a savory lamb broth with lamb meat. It is closely associated with Xi'an's Muslim quarter dining culture and is one of the province's most famous hearty meals.[1]
Characteristics
The pleasure of paomo is the way bread absorbs lamb broth while remaining distinct from a simple porridge. Broth is aromatic and meaty; toppings may include cilantro, chili paste, and sweet pickled garlic on the side. Eating usually begins with the customer tearing the bread by hand—an expected part of the ritual in traditional shops.
