Anhui Alcohol
Anhui alcohol includes several well-known baijiu regions and a distinct Hui-style yellow-rice-wine tradition. A brand's home city is a useful starting point, but it does not represent every drinking custom or producer in the province.
Baijiu regions
Bozhou is associated with Gujing Gongjiu. The brand's historical brewing site includes old wells and fermentation pits, and its production tradition has been recognized in heritage and protected-product records.[1][2]
Huaibei is the home of Kouzi liquor. The municipal government describes its brewing process through stages including making the starter, fermentation and graded storage, and identifies its style as a distinct mixed-aroma baijiu tradition.[3]
Huoshan County in Lu'an is associated with Yingjia Gongjiu. Its heritage record describes a multi-grain baijiu tradition adapted to local conditions and brewing methods.[4][5]
Other local makers and protected names add to the picture; Anhui liquor is not limited to these three large brands. The region's food map also includes smaller county producers and traditional brewing practices.[6]
Hui-style yellow rice wine
Anhui also has a yellow-rice-wine tradition. Nanfeng yellow rice wine (南丰黄酒) is associated with Langxi County in Xuancheng. Its protected-product description identifies glutinous rice and other grains from the Langchuan River area and a traditional small-jar brewing method. The method and product are distinct from grain-based baijiu.[7]
Local identity and food
Local alcohol belongs alongside the foods, crops and craft of its production area. Bozhou's baijiu, Huaibei's Kouzi, Huoshan's Yingjia and Xuancheng's Nanfeng yellow rice wine have different production histories. Describing them separately helps avoid treating Anhui as one uniform liquor style.[2][3][4][7]
