Jianbing Guozi

Jianbing Guozi (Simplified Chinese: 煎饼果子; Traditional Chinese: 煎餅果子; Pinyin: Jiānbǐng guǒzi) is a northern Chinese street-breakfast wrap: a thin Jianbing-style griddle crepe folded around a filling traditionally called guozi—historically a fried dough stick or similar fritter, and in many modern Tianjin and chain stalls a thin crisp cracker (薄脆) plus egg, sauces, and herbs. This wiki keeps a separate page from Jianbing because "jianbing" names the crepe (and the broader breakfast category), while jianbing guozi names the filled wrap as a Tianjin-linked signature product. Folk and commercial usage often blur the two labels; soft claims that they are always identical are disputed.[1]
Characteristics
Exterior is a folded egg-washed crepe; interior includes egg, savory sauces (sweet bean / fermented sauce, chili), scallion and cilantro, and a loud crisp or fried-dough insert. Eaten hot by hand.
Ingredients (overview)
Grain batter (mung-bean / wheat mixes vary), egg, sauces, herbs, guozi or thin cracker (薄脆); optional ham or other modern fillings. Distinct naming focus from the general Jianbing crepe article.
History and culture
Strongly associated with Tianjin breakfast culture; Beijing and other northern cities sell related wraps under both names. English menus may say "jianbing guozi," "Chinese crepe," or "Tianjin pancake." See Tianjin Food and Jianbing.
