Sister Song's Fish Soup (Simplified Chinese: 宋嫂鱼羹; Traditional Chinese: 宋嫂魚羹; Pinyin: Sòng sǎo yú gēng) is a Hangzhou classic of finely flaked freshwater fish in a thickened savory soup, traditionally linked to a Song-dynasty lakeside vendor known as Sister Song. It is a Hangzhou name dish alongside West Lake Vinegar Fish on Zhejiang Food.
Characteristics
Soup is silky and egg-thickened or starch-thickened; fish is boneless shreds. Flavor is savory and gently seasoned rather than vinegar-forward like West Lake Vinegar Fish.
