Egg Custard Bun (Simplified Chinese: 奶黄包; Traditional Chinese: 奶黃包; Pinyin: Nǎihuáng bāo) is a Cantonese Dim Sum steamed bun filled with a sweet egg-and-milk custard that holds its shape when cut—unlike the runny salted-egg "lava" of Liu Sha Bao.

Characteristics

Bright yellow, creamy but sliceable filling inside a white fluffy bao. Sweetness is dessert-like; no intentional "flowing sand" spill.

Ingredients (overview)

Yeast bao dough; custard of egg, sugar, milk or milk powder, butter, flour or starch. Steamed and served hot.

History and culture

Standard on yum cha carts with Char Siu Bao and Liu Sha Bao; English "custard bun" may ambiguously refer to either, so this wiki keeps separate pages.

Serving and variations

Dim sum basket. See Dim Sum and Liu Sha Bao.
