Hele Crab (Simplified Chinese: 和乐蟹; Traditional Chinese: 和樂蟹; Pinyin: Hélè xiè) is crab associated with Hele Town near Wanning on Hainan's southeastern coast, usually steamed and eaten with ginger-garlic vinegar—one of the island's four famous dishes with Dongshan Lamb, Jiaji Duck, and Wenchang Chicken.

Characteristics

Local praise focuses on rich yellow crab roe/meat ("yellow meat"), oily aroma, and a clean steamed taste best in autumn. Dipping sauces stay sharp and gingery rather than heavy.

Ingredients (overview)

Fresh Hele-area crab, ginger, garlic, vinegar for dipping. Steaming preserves the crab's own flavor.

History and culture

Geographic specialty of Hele / Wanning on Hainan Food; paired rhetorically with the island's poultry and goat "four famous" set.

Serving and variations

Steamed, shared at table. See Hainan Food, Dongshan Lamb, Jiaji Duck, and Wenchang Chicken.
