Hulatang (Simplified Chinese: 胡辣汤; Traditional Chinese: 胡辣湯; Pinyin: Húlà tāng), often translated as peppery soup, is a Henan breakfast soup thickened with starch and seasoned assertively with black pepper (胡椒)—a morning staple across central China and a signature of Henan Food.

Characteristics

Body is viscous; heat comes mainly from pepper rather than chili alone; gluten strands, vermicelli, or meat bits may appear. Kaifeng and other cities have local variants including lamb-broth styles.
