Youpo Noodles (Simplified Chinese: 油泼面; Traditional Chinese: 油潑麵; Pinyin: Yóupō miàn) are a Shaanxi wheat-noodle bowl finished by ladling smoking-hot oil over chili flakes, scallion, and garlic so the aromatics bloom—related to but distinct from belt-wide Biangbiang Noodles.

Characteristics

Noodles may be hand-pulled or knife-cut; the signature is the oil-splash aroma and chili-red sheen. Flavor is savory-spicy with vinegar brightness in many bowls.
