Huimian (Simplified Chinese: 烩面; Traditional Chinese: 燴麵; Pinyin: Huìmiàn) is a Henan noodle soup of wide, hand-stretched noodles cooked in a rich broth with meat and vegetables—one of the province's most representative everyday dishes.

Characteristics

Noodles are chewy and broad; broth is often lamb- or beef-based and lightly thickened by the cooking process. Chili and cilantro condiments are common at the table.
