Siu Mei (Simplified Chinese: 烧味; Traditional Chinese: 燒味; Pinyin: Shāo wèi; Cantonese: siu mei) is the Cantonese family of roasted and barbecued meats displayed in restaurant windows—most famously Char Siu, Roast Goose, roast duck, and crispy pork.[1]
Characteristics
Shared traits include hanging roasts, shiny lacquered surfaces, and chopping to order over rice or noodles. Each meat has its own marinade and cook method within the same shop craft.
