Roast Goose (Simplified Chinese: 烧鹅; Traditional Chinese: 燒鵝; Pinyin: Shāo é) is a Cantonese siu mei roast of goose with glossy, crisp skin and savory meat, hung and chopped to order in roast-meat shops.[1]

Characteristics

Skin should crackle; meat is richer than roast duck. Often served with plum sauce. Closely related shop craft produces Char Siu and roast duck in the same siu mei tradition.

Ingredients (overview)

Goose, maltose or sugar glaze, five-spice and salt marinades, and high-heat roasting. Exact shop formulas vary.

History and culture

Roast goose is a pride item of Guangdong and Hong Kong siu mei culture and a frequent comparison point with Peking-style roast duck. See Siu Mei for the broader roast-meat category.

Serving and variations

Chopped on rice or as a meat plate. See Siu Mei, Char Siu, Hong Kong Food, and Guangdong Food.
