Beef Chow Fun (Simplified Chinese: 干炒牛河; Traditional Chinese: 乾炒牛河; Pinyin: Gān chǎo niú hé; Cantonese: gon chao ngau ho) is a Cantonese stir-fry of wide flat rice noodles with beef, bean sprouts, and soy seasoning, prized for smoky wok hei.[1]

Characteristics

Noodles should be separate and lightly charred, not soggy. Bean sprouts add crunch; beef is usually thinly sliced and velveted. "Dry-fried" means little sauce pooling.

Ingredients (overview)

Fresh hor fun (flat rice noodles), beef, bean sprouts, scallion, light and dark soy, oil, and sometimes onion. High heat is essential.

History and culture

The dish is a benchmark of Hong Kong and Guangdong wok cooking and a frequent order in Cantonese restaurants worldwide. It showcases technique more than rare ingredients.
