Douhua

Douhua (Simplified Chinese: 豆花; Traditional Chinese: 豆花; Pinyin: Dòuhuā), also called tofu pudding or tofu flower, is very soft freshly set soybean curd served with sweet syrups or savory sauces depending on region.[1]
Characteristics
Texture is tender and spoonable, softer than block tofu. Northern and southwestern savory versions may use soy sauce, chili oil, and crunchy toppings; southern sweet versions use ginger syrup or peanuts.

Soy milk coagulated with gypsum or similar; toppings such as syrup, peanuts, century egg, or savory sauces. Not the same as fried Stinky Tofu.
History and culture
Douhua is a widespread Chinese Snack with strong regional dressing traditions. Street vendors and dessert shops both serve it.
