"[[DongPo Stewed Pork|Dongpo Pork]]" is attributed to Su Dongpo of the Northern Song dynasty. One day, as Su Dongpo was traveling, he arrived at Aicheng Village by Poyang Lake in Yongxiu County. He encountered a farmer whose child was ill and unconscious and revived the child with herbal medicine. Grateful, the farmer insisted on keeping Su Dongpo as a guest. Early the next morning, the farmer bought two pounds of pork from the market, tied it with a bundle of straw, and returned excitedly. He entered the room softly and asked, "Sir, how should we cook this meat?" At that moment, Su Dongpo was facing the window, admiring the beautiful countryside, and didn't hear the farmer's question. Instead, he recited a poem, "禾草珍珠透心香" (Rice stalk pearls, fragrant to the core). The farmer misunderstood and heard, "和草整煮透心香" (Boil the whole thing with straw, fragrant to the core). He quickly put the meat together with the bundle of straw into the pot and stewed it until tender. While eating, Su Dongpo tasted the whole piece of meat with the flavor of straw and found it surprisingly fragrant and delicious. Su Dongpo continued to cook meat this way, and it became known as "Dongpo Pork," quickly spreading to various places.

Jiangxi Food covers Gan cuisine (赣菜) and the province’s wider food traditions. Its dishes and foodways vary across the Poyang Lake plain, the Gan River basin, the hills of western Jiangxi and the Hakka communities of the south. Rice noodles, freshwater fish, pork, chili-seasoned dishes, tea, rice wine and local snacks all belong to this larger food map; no single list represents every county or household.

Jiangxi provincial materials use regional labels such as Yuzhang, Xunyang, Gannan, Rao and Pingxiang when discussing cuisine promotion and local food culture. These labels are useful guides to regional traditions, not a single universally fixed classification of every Jiangxi dish.[1]

Jiangxi Food by City

These are selected dishes and foodways associated with Jiangxi’s 11 prefecture-level cities. Many foods are shared across counties, and the entries are not exclusive-origin claims.

  • Nanchang: Nanchang mixed rice noodles and crock-pot simmered soup are common breakfast pairings. Other local foods include Songhu steamed meat with rice flour, stir-fried artemisia with cured pork, rice cakes and fermented rice snacks.[2]
  • Jingdezhen: cold rice noodles, jiaoziba (steamed rice-flour pockets) and alkaline rice cake are prominent local foods. Other examples include pottery-baked chicken and bitter-oak starch tofu.[3]
  • Pingxiang: Lianhua blood duck, Pingxiang stir-fried pork, smoked meat and foods from the Wugong Mountain area. Lianhua blood duck is included in the province’s 2021 “Ten Famous Gan Dishes” selection and is listed by the Ministry of Culture and Tourism among Jiangxi’s regional food examples.[4]
  • Jiujiang: white-braised fish head, Lushan stone fish, stone ear mushrooms and stone chicken; Xiushui sha zi, radish cakes and tea cakes are among other regional foods.[5]
  • Xinyu: Fenyi power-station snails, Wushan chicken and local dried or salted rice-noodle dishes. Fenyi snail cookery and Shuibei fermented black beans are also presented among Xinyu’s food-making traditions.[6]
  • Yingtan: Longhu Mountain and Shangqing foods include tofu dishes and foods served in the Tianshi Bagua banquet tradition; beef rice noodles are another city-associated staple.[7]
  • Ganzhou: Gannan Hakka cooking includes Xingguo Four Stars Gazing at the Moon, Ningdu three-cup chicken, Gannan stir-fried fish, tofu dishes and rice noodles. An’yuan three-delicacy rice noodles, Ruijin beef soup, Hakka rice wine and lei cha (ground tea-and-grain drink) are further examples.[8]
  • Ji’an: Taihe black-bone chicken, Jinggang smoked bamboo shoots, Anfu ham, Yongxin blood duck and local tribute rice noodles. Rice-flour dishes and preserved foods also feature in county cooking.[9]
  • Yichun: Yichun zha noodles, Gao’an dried tofu skin, Fengcheng frozen-rice candy and local chicken and bamboo-shoot dishes. County specialties vary across the city’s mountain, river and farming areas.[10]
  • Fuzhou: Fuzhou rice noodles, Linchuan beef offal, Zixi bread, Nanfeng fish foods and Lichuan taro cakes. Huwan tribute noodles, Nanfeng clear soup and local lotus-seed foods also appear in municipal food events.[11]
  • Shangrao: Yugan chili pork, Wuyuan steamed dishes and clear-steamed red carp, Shangrao mandarin-fish rice noodles, Yiyang rice cake and local rice-flour snacks.[12]

Gan cuisine and selected dishes

The Ministry of Commerce organized a province-wide selection of “Ten Famous Gan Dishes” and “Ten Famous Gan Snacks,” announced in 2021 after local recommendations, expert review and public voting. The list is a dated public selection rather than a permanent ranking or an exhaustive catalogue.[13]

The selected dishes were Ningdu three-cup chicken, Lianhua blood duck, Four Stars Gazing at the Moon, Yugan chili pork, Jinggang smoked bamboo shoots, white-braised fish head, mandarin fish with rice noodles, turtle with rice noodles, stir-fried artemisia with cured pork, and nourishing Taihe black chicken. Selected snacks included crock-pot soup, Nanchang rice noodles, Ruijin beef soup, Yiyang rice cake, Jiujiang radish cake, Jinggang glutinous rice cake, Ruizhou shaomai, alkaline rice cake, Lichuan taro cake and An’yuan three-delicacy rice noodles.[13]

Other regional lists also document Lushan foods, Gannan tofu dishes, Wuyuan steamed foods, Ningdu meatballs, Anfu ham, local cured meats and rice-flour preparations.[5][9][8][5][9][8]

Rice noodles and other staple foods

Rice noodles are made and served in many Jiangxi localities. A Jiangxi rice-noodle mark announced by the provincial commerce authorities identifies a representative form from each of the 11 prefecture-level cities: Nanchang mixed rice noodles, Jiujiang stir-fried rice noodles, Jingdezhen cold noodles, Pingxiang chucai noodles, Xinyu salted rice noodles, Yingtan beef rice noodles, Ganzhou An’yuan three-delicacy noodles, Yichun zha noodles, Shangrao mandarin-fish rice noodles, Ji’an Xiajiang tribute noodles and Fuzhou rice noodles. The mark highlights regional variety rather than setting a single recipe standard.[14]

Rice and rice-flour foods include steamed pork with rice flour, rice cakes, stuffed rice-flour dumplings, glutinous rice snacks and fermented-rice desserts. Wheat and other grain foods appear in local pastries, buns and breads, including Zixi bread and Fuzhou’s Huwan tribute noodles.[15]

Street food, breakfast and snacks

Breakfast and street-food examples include Nanchang rice noodles with crock-pot soup, Jingdezhen cold noodles and jiaoziba, Jiujiang radish cakes and tea cakes, Xiushui sha zi, Yiyang rice cake, Ruizhou shaomai, Fuzhou beef offal and rice noodles, and Ganzhou beef soup and three-delicacy noodles. Some are sold as breakfast foods, some as snack or market foods, and local serving styles differ.[13][3][11][8]

Tea and non-alcoholic drinks

Jiangxi tea includes Lushan Yunwu, Wuyuan green tea, Gougunao, Fuliang tea and Ninghong black tea. The Ministry of Culture and Tourism presents these as the province’s “four green teas and one black tea” (四绿一红), linking tea gardens and processing traditions with local food and ceramic culture.[16]

Sweet fermented-rice drinks and rice wines are also part of local foodways. Tea is served alongside regional pastries and snacks; in southern Jiangxi, lei cha is a ground tea-and-grain drink associated with Hakka food customs.[8][2]

Alcohol and fermentation

Regional alcoholic drinks include Zhangshu baijiu such as Four Te (四特), Li Du baijiu from Nanchang’s Jinxian area, Dingfang red rice wine and southern Jiangxi Hakka rice wine. Nanchang’s intangible-heritage records document Li Du distilling, Dingfang wine-making and Nantai rice-wine brewing; Ganzhou sources describe Yangcun rice-wine making in Hakka communities.[17]

Fermented foods and flavorings include rice-wine lees fish, preserved and smoked meats, fermented black beans, tofu products and local pickles. Their ingredients and names vary by county; they are not a single province-wide seasoning blend.[18]

Ingredients, condiments and regional products

Rice and rice flour, freshwater fish, pork, chicken, chili, preserved vegetables, bamboo shoots and freshwater lake products appear across Jiangxi cooking. The province’s dish selections and regional routes document these ingredients in different combinations: for example, Poyang Lake fish, cured pork with artemisia, Lianhua duck, Jinggang smoked bamboo shoots and Hakka rice-flour foods.[19]

Gannan tea oil is a named regional product used in cooking. Local tea products, rice noodles, dried bamboo shoots, lotus seeds, citrus, preserved duck and tofu products are also sold as place-linked specialties. A regional product name describes a production tradition or designated area; it does not mean that every similarly named item has the same origin or certification.[20]

Food brands and named products

Jiangxi’s food producers and regional products include the Four Te baijiu brand from Zhangshu; Li Du baijiu and Dingfang red rice wine from Nanchang-area distilling and brewing traditions; Gannan tea oil; the Jiangxi rice-noodle public mark; and the tea names Lushan Yunwu, Wuyuan green tea, Gougunao, Fuliang and Ninghong. These examples span commercial brands, public regional marks and place-based products, which are different kinds of names.[21]

Cooking techniques and food crafts

Jiangxi cooking includes rice-flour steaming, stir-frying, braising, clay-pot simmering, smoking and curing. The named dishes illustrate different methods: steamed meat with rice flour and Four Stars Gazing at the Moon use steaming; Pingxiang stir-fried pork is cooked over high heat; Nanchang crock-pot soup is slowly simmered; smoked bamboo shoots and cured pork preserve ingredients for later use. These are examples from local dishes, not a fixed checklist of Gan-cuisine techniques.[22]

Food-related craft traditions include rice-noodle making, tea processing, baijiu and rice-wine brewing, tofu making, preserved foods and county pastry skills. Local records document several of these as intangible-heritage items; that status applies to the named craft or project, not to every Jiangxi dish.[23]
