|
Harbin Red Sausage (Simplified Chinese: 哈尔滨红肠; Traditional Chinese: 哈爾濱紅腸; Pinyin: Hā'ěrbīn hóngcháng) is a smoked, reddish pork sausage associated with Harbin, reflecting the city's Russian-influenced meat-curing history and sold as a Northeast snack and gift food on Heilongjiang Food.
Characteristics
Garlicky smoked aroma, springy sliceable texture, deep red casing or meat color from curing and smoking. Eaten cold or lightly heated.
Ingredients (overview)
Pork, garlic, curing salts, smoke; exact spice blends are brand secrets. Distinct from Cantonese lap cheong sweet sausage.
History and culture
Tied to Harbin's early-20th-century industrial and Russian-community foodways; now a tourist and supermarket staple of Dongbei identity with Suan Cai Bai Rou and other Heilongjiang foods.
Serving and variations
Sliced snack with beer or bread. See Heilongjiang Food and Suan Cai Bai Rou.
