Soy Sauce Chicken (Simplified Chinese: 豉油鸡; Traditional Chinese: 豉油雞; Pinyin: Chǐyóu jī; Cantonese: see yao gai / si6 jau4 gai1) is a Cantonese whole chicken cooked gently in a soy-based master stock until the skin turns a glossy mahogany brown. Although it is not spit- or oven-roasted, Hong Kong and Guangdong food culture class it with Siu Mei (焼味) counter meats, hung beside Char Siu, Roast Goose, and Crispy Roast Pork in shop windows.

Characteristics
The finished bird shows a deep reddish-brown soy color and a soft, jelly-like skin sheen rather than crackling roast skin. Flavor is savory-sweet from light and dark soy balanced with sugar, with aromatic warmth from ginger, scallion, and whole spices such as star anise. Soft craft cue: traditional Cantonese versions often scent the stock with Chinese rose wine (玫瑰露酒); Shaoxing wine is a common practical substitute in home kitchens abroad. Meat nearer the bone should stay juicy; overcooking dulls the dish into gray dryness. Keep distinct from White Cut Chicken, which prizes pale skin and fresh chicken taste with a ginger-onion dip, and from honey-red Char Siu glaze.

Ingredients (overview)
Whole chicken; light soy (seasoning) and dark soy (color); sugar or rock sugar; ginger and scallion; star anise and related spices; Chinese rose wine or Shaoxing wine in many Cantonese formulas; water or light stock to form a reusable master stock. Soft shop cue: long-used master stocks are closely guarded and refreshed rather than discarded—overview only, not a recipe. == History and culture ==

English and Chinese food writing place soy sauce chicken in Cantonese roast-shop / siu-laap culture of Guangdong and Hong Kong: a master-stock bird that rounds out the roast-meat window when diners want soy depth without crisp pork skin or goose fat. Soft diaspora note: Cantonese migration carried the dish into Southeast Asian and overseas Chinatown barbecue shops; Singapore’s soya-sauce chicken rice stalls became internationally famous in food media in the 2010s—treat as cultural visibility, not store-count advertising. Soft festive cue: because the bird can be cooked ahead and chopped for sharing, it appears on Lunar New Year and banquet tables as well as everyday rice plates. Soft naming: menus may say 豉油鸡, 酱油鸡, or colloquial 打鸡 alongside English “soy sauce chicken.”

Serving and variations
Chopped over rice or noodles, or plated as a shared main with a ladle of reduced master stock; ginger-scallion sauce is a common optional dip. Soft variation: whole-bird shop hang vs home pot braise; sweeter vs saltier house stocks; rose-wine fragrance vs Shaoxing-only aromatics. Keep separate from American “soy chicken” marketing that skips Cantonese master-stock framing. See Siu Mei, Char Siu, Roast Goose, Crispy Roast Pork, and Hong Kong Food.
