Steamed Wuchang Fish (Simplified Chinese: 清蒸武昌鱼; Traditional Chinese: 清蒸武昌魚; Pinyin: Qīngzhēng Wǔchāng yú) is a Hubei specialty of Wuchang bream (or related freshwater bream) steamed with light soy, ginger, and scallion to showcase fresh fish flavor.

Characteristics

Seasoning stays restrained so the fish's tenderness dominates. Presentation is usually whole fish with clear juices and aromatics.

Ingredients (overview)

Wuchang bream or similar freshwater fish, ginger, scallion, light soy or steamed-fish soy sauce, oil, and optional steamed-fish soy drizzle. Freshness is critical.

History and culture

The dish tops many Hubei Food famous-dish lists and is tied to Wuhan and Yangtze freshwater-fish culture. It is often mentioned together with lotus-root rib soup as a Hubei pairing.
