Cart Noodles (Simplified Chinese: 车仔面; Traditional Chinese: 車仔麵; Pinyin: Chēzǎi miàn; Cantonese: chē jái mihn) are a Hong Kong style of inexpensive noodle soup in which customers choose noodle type, soup base, and assorted toppings—originally associated with mobile carts, now common in casual eateries.[1]

Characteristics

Highly customizable; toppings range from fish balls and pig skin to greens and curry fishballs. Broths may be clear, spicy, or satay-like.
